Ingredients for Sweet Potato Casserole
- 4 Medium Sized Sweet Potatoes
- 1 ½ Cup of Coconut Milk
- 1 Tablespoon of Coconut Oil
- 1 Tablespoon of Agave Sweetener

- 2 Tablespoons of Rolled Oats
- 1 ½ Cup of Granola and Pecans
- 1 Tablespoon of Agave Sweetener Optional

Instructions
Directions for Sweet Potato Casserole
- Preheat oven at 350 degrees.
- Boil sweet potatoes in water until you’re fully and capable of peeling off the skin.
- Once peeled and placed in container/bowl of your choice, mash the sweet potatoes so there are no more solid pieces left.
- Add coconut milk, coconut oil, and agave sweetener until fully mixed in with the sweet potatoes.
- Place mixed sweet potato in pan and evenly distribute it throughout.
Directions for Topping:
- Grind granola, pecans, oatmeal, and agave sweetener together in a grinder (I used my Nutribullet grinder blade).
- Place on top of finished sweet potato in your pan.
- Add extra nuts and oats on top for a crunchier texture.
- Place finished casserole in your preheated oven for about 5-10 minutes. This will allow all the ingredients to soften together.
- Eat and enjoy!!!
